Ingredients

  • 6 bacon rashers
  • 6 eggs
  • ¼ cup cream
  • 2 cups tasty cheese, grated 
  • 1 cup spinach, cooked, excess moisture squeezed out
  • 10 cherry tomatoes, cut into quarters
  • ¼  tsp salt

Method

  • Preheat oven to 180 degrees Celsius, and lightly grease 12 muffin tin holes.
  • Cook the bacon in a frying pan over medium heat. Drain off excess fat and cut int pieces.
  • In a large mixing bowl, beat the eggs until smooth. Add the cream, salt, cheese and stir to combine, then add the spinach, tomato and cooked bacon and stir.
  • Spoon the egg mixture into the prepared muffin tin.
  • Place in the oven and bake for 20 minutes until cooked.
  • Remove from the oven, and allow the muffins to cool before removing the from the tin.
