Ingredients
- 6 bacon rashers
- 6 eggs
- ¼ cup cream
- 2 cups tasty cheese, grated
- 1 cup spinach, cooked, excess moisture squeezed out
- 10 cherry tomatoes, cut into quarters
- ¼ tsp salt
Method
- Preheat oven to 180 degrees Celsius, and lightly grease 12 muffin tin holes.
- Cook the bacon in a frying pan over medium heat. Drain off excess fat and cut int pieces.
- In a large mixing bowl, beat the eggs until smooth. Add the cream, salt, cheese and stir to combine, then add the spinach, tomato and cooked bacon and stir.
- Spoon the egg mixture into the prepared muffin tin.
- Place in the oven and bake for 20 minutes until cooked.
- Remove from the oven, and allow the muffins to cool before removing the from the tin.
