Combine chia seeds chia seeds with 1/2 cup water in a large bowl. Set aside for 20 minutes, until the water is absorbed and mixture is thick and gel-like.
To make the tangy peanut dressing, place the smooth peanut butter, lime juice and garlic in a food processor and blitz until smooth. Add the oil and 2 tbs water and blitz until combined is the consistency of pouring cream. Add more water, 1 tsp at a time, to thin if necessary. Season with salt.
Add the chicken mince, almond meal, shallots, lemongrass and 1 tsp salt to the chia mixture. Mix until well combined use a little more almond flour if required . Roll tablespoonfuls into balls.
Heat the olive oil in a large non-stick frying pan over medium-high heat. Cook meatballs, in batches, turning often, for 3-4 minutes or until golden and cooked through.
Serve the meatballs in Cos lettuce leave s with cucumber pealed into ribbon lengths and mint leaves. Drizzle with the peanut dressing, scatter with chilli to taste and serve with lime wedges.
