Chia Chicken Meatball Cos Cups

Ingredients
  

  • 40 g 1/4 cup chia seeds
  • 500 g Chicken Mince
  • ¼ cup Almond meal
  • 2 green shallots thinly sliced
  • 1 stem lemongrass pale section only, finely chopped
  • 1 tsp salt
  • 1 tbsp olive oil
  • Baby cos lettuce leaves to serve
  • 1 Lebanese cucumber peeled into ribbons
  • 2 Sprigs fresh mint leaves
  • Sliced fresh red chilli
  • 1 Lime
  • Tangy peanut dressing
  • 2 tbsp crunchy peanut butter
  • 60 ml 1/4 cup fresh lime juice
  • 1/2 tsp finely chopped garlic
  • 60 ml 1/4 cup vegetable oil or other neutral-tasting oil

Instructions
 

  • Combine chia seeds chia seeds with 1/2 cup water in a large bowl. Set aside for 20 minutes, until the water is absorbed and mixture is thick and gel-like.
  • To make the tangy peanut dressing, place the smooth peanut butter, lime juice and garlic in a food processor and blitz until smooth. Add the oil and 2 tbs water and blitz until combined is the consistency of pouring cream. Add more water, 1 tsp at a time, to thin if necessary. Season with salt.
  • Add the chicken mince, almond meal, shallots, lemongrass and 1 tsp salt to the chia mixture. Mix until well combined use a little more almond flour if required . Roll tablespoonfuls into balls.
  • Heat the olive oil in a large non-stick frying pan over medium-high heat. Cook meatballs, in batches, turning often, for 3-4 minutes or until golden and cooked through.
  • Serve the meatballs in Cos lettuce leave s with cucumber pealed into ribbon lengths and mint leaves. Drizzle with the peanut dressing, scatter with chilli to taste and serve with lime wedges.
