Ingredients

  • ¼ cup fresh thyme leaves, roughly chopped
  • 2 tbsps mixed dried herbs
  • 1 tsp ground cumin
  • 2 small cloves garlic, crushed
  • 1 large cauliflower, cut into 1 ½ cm thick steak slices
  • 100g butter, room temperature
  • Salt & pepper

Method

  • Preheat oven to 180 degrees Celsius, and line a large, flat baking tray with baking paper.
  • Mash the butter together with the thyme, dried herbs, cumin and garlic and a couple of grinds of salt and pepper.
  • Coat the cauliflower steaks in butter on both sides.
  • Heat a large frying pan over a medium-high heat and fry the steaks for 2 minutes on each side, then place in the baking tray.
  • Roast for 15 minutes until the cauliflower is cooked through.
