Ingredients

  • 225g  minced chicken or pork mince
  • 1 tsp Mexican Seasoning
  • 12 fresh jalapeños
  • 1 cup cream cheese
  • ½ cup cheddar cheese, finely shredded
  • 12 bacon strips

Method

  • Preheat the oven to 200°C and line a tray with baking paper.
  • Add olive oil to a frying pan over medium heat. Add the mince and taco seasoning and fry until cooked through, breaking it up as you go. Set aside to cool.
  • Cut the jalapeños in half along the entire length of the pepper, and remove the seeds.
  • Combine the cream cheese, cheddar cheese, and cooked mince  in a bowl. Fill the jalapeños with the mixture.
  • Wrap the bacon strips diagonally around each stuffed jalapeño. Place on the prepared baking tray. Bake for 18-20 minutes until the bacon is crisp and serve
