Ingredients
- 225g minced chicken or pork mince
- 1 tsp Mexican Seasoning
- 12 fresh jalapeños
- 1 cup cream cheese
- ½ cup cheddar cheese, finely shredded
- 12 bacon strips
Method
- Preheat the oven to 200°C and line a tray with baking paper.
- Add olive oil to a frying pan over medium heat. Add the mince and taco seasoning and fry until cooked through, breaking it up as you go. Set aside to cool.
- Cut the jalapeños in half along the entire length of the pepper, and remove the seeds.
- Combine the cream cheese, cheddar cheese, and cooked mince in a bowl. Fill the jalapeños with the mixture.
- Wrap the bacon strips diagonally around each stuffed jalapeño. Place on the prepared baking tray. Bake for 18-20 minutes until the bacon is crisp and serve
