Tomato and Avocado Salad (Serves 4)
– 4-5 heirloom or vine tomatoes, sliced
– 2 garlic cloves, finely chopped
– ½ red onion, thinly sliced
– 1 avocado, cut into 2cm pieces
– 1 handful of mixed herb leaves (such as flat-leaf parsley and basil)
– 2-3 tablespoons apple cider vinegar
– 1/3 cup extra-virgin olive oil
Place the tomato on a platter, sprinkle some salt and pepper, then toss over the garlic. Arrange the slices of red onion on the tomato, then a layer of avocado and roughly chopped herbs.
To make the dressing, whisk the vinegar and olive oil in a small bowl until well combined. Drizzle over the salad
